I still get so excited for that first big snowfall of the winter, and last weekend we got a good 8" of the fluffy white stuff. We checked off our snow day list: sledding, snowman, snow angels, and best of all... maple snow taffy! I was first introduced to this delicious winter treat from my days at the University of Vermont. They had a "maple day" every year in late winter, where maple syrup producers would set up outdoors with samples of the divine amber nectar and best of all, maple taffy served on little paper dishes filled with snow/shaved ice.
Making this sweet treat has become a yearly winter tradition, and it could not be simpler. All you need is maple syrup and snow. Basically you cook the maple syrup to soft ball stage which is 235˚F. You don't have to get the temperature exact. If you don't have a candy thermometer, just let it cook for about 5 minutes, it should be bubbling, the color will darken and it will reduce in volume.
I like to spoon the cooked maple taffy out into thin strips over packed snow and then twist them up onto popsicle stick for easy eating. Keep the taffy on the snow until you're ready to serve it to keep it firm, else it tends to soften and get sticky when put on a plate at room temperature, for instance.
